A Quick, Healthy, Delicious on-the-go lunch for the School Year!

Hey everyone! One of the things I’ve been thinking about recently is getting my diet in order.  It seems like every school year, I have two problems:

1. I never have time to sit and eat well-rounded lunch.  I mean, c’mon.  We all know that every minute of our short lunch period is precious time that is usually spent prepping rather then eating.  I always find myself eating a non-sufficient granola bar while running around my classroom getting things ready for the second half of the day.  This is further true if I have to heat something- That microwave line is never ending!
2. The teacher’s lounge is always full of very un-healthy options. Why does it seem like everyday, someone is bringing in something delicious and fattening, very bad for me, and yet impossible to resist?!  Yes. If I do ever eat my lunch in the teacher’s lounge, I end up eating something I shouldn’t.

So, I’ve decided to do a series of posts about lunch options that are easy to make and take, healthy, and very suitable for quick, teacher-lunches!  I will include the calories whenever possible.  For today, I am going to share with you my recent FAVE:

The Oatmeal Fruit Smoothie

Here’s what you’ll need:
1/2 cup Ice
1/2 cup Frozen Strawberries
1/2 cup Old-Fashioned Oats
1/2 cup  Nonfat Greek Yogurt
1 medium Banana
1/2 Scoop Vanilla Protein Powder
1 cup juice/water 50/50
1 T. Honey (optional)
The protein powder I use is called Syntha-6 by BSN
It has 22 grams of protein in one scoop!
 You can get it on Amazon or Bodybuilding.com.
 
  
All you have to do is put all of the ingredients in your blender, ice and frozen berries first…
Once it’s all nice and blended up, pour it into one of those awesome straw cups, and enjoy!  In total, this shake comes to about 470 calories, and it’s full of protein and very filling! Make it at home in the morning, then throw it in the fridge in your teacher’s lounge (or your own classroom mini fridge if you’re lucky enough to have one!) when you get to school.  You might only want 2/3rds of it for lunch, and then you can finish the rest during 2nd recess. 🙂
